Oxford City Farm kale mac & cheese!

This recipe, shared by one of our volunteers, has the addition of an extra special ingredient - Oxford City Farm goats milk!

You will need to buy your own goat milk as we don’t sell ours - the farm goat milk is a perk of joining our goat milking programme (which you can learn more about here). You can buy our kale (or whichever greens take your fancy) at our produce stall on Saturdays from 10am-1pm.

Ingredients:

  • 750 ml goat milk

  • 750 ml water

  • 200 grams Oxford City Farm red kale or Cavelo Nero

  • 250 grams cheddar cheese

  • 500 grams macaroni pasta

  • 1 clove of garlic, chopped

  • 1 tsp salt

Directions:

  1. Bring the goat milk and water to boil in a large pan.

  2. Chop the kale and add the chopped kale, garlic, and macaroni to the pan. Bring back to full boil and then turn down heat to simmer on medium heat, covered. 

  3. Let cook for approximately 10 minutes, until very little liquid remains.

  4. Grate cheddar cheese. Turn off heat and stir in cheddar. 

  5. OPTIONAL: add 100 grams crumbled goat cheese to make the goat flavour more intense (otherwise it's fairly subtle!)
